You walk into our kitchen and bath showroom and you are immediately hit with the inviting aroma of freshly baked bread.  That warm and comforting feeling of home quickly sets in.  Is that an air freshener? you ask yourself, as you stare at a gorgeous loaf of homemade bread proudly displayed on the countertop.  Who could have created such a masterpiece? A smiling face greets you and says “Welcome to Superior Cabinets, we have been expecting you.”

Bacon Bread by Superior Cabinets

That was an elaborate way of telling you that we bake fresh bread daily in our Saskatoon showroom.  Yes, we’re addicted to carbs and the amazing smell! Each day our showroom takes the time to carefully create a special loaf of the day for our clients and staff.

When we started doing this several years ago, we had a very boring and simple whole wheat bread recipe that smelled great and would never get eaten. Fast forward to today and you pretty much have to get in line for a slice!

We often gets asked to share our bread maker recipes and we always do without hesitation. Enjoy!

BASIC BREAD RECIPE

You can use a total of 3 cups of any bread flour (eg. All white or all multi-grain or all whole wheat or any combination of them totaling 3 cups) and the bread will turn out.  I use brown sugar when making whole wheat, multi-grain or cinnamon. Please see the variations on white bread below.

11/4 cup warm water (110 F/ 45 C)

2 tbsp sugar

1 tsp yeast

1/4 cup vegetable oil (Over pour to add approx. one extra tbsp)

3 c white flour

1/3 cup skim milk powder

1 tsp salt

Put the ingredients into the machine in this order. Change settings to 2lb loaf and to the light crust and press start. (Check your manual and use the setting for a 3 cup loaf.  My Cuisinart says that this is a 1.5 lb loaf.)

If the machine starts making a banging and beeping, open the lid and add more water  – about one or two tbsp. at a time .  If it is going to need more water, it will be in the first 15-20 minutes.

Variations on White Bread recipe:

Substitute ¾ c sour cream for same amount of water and use one of the following lists of additional ingredients. ( Eg: ¾  cup sour cream and enough water to make a total of 1 ¼ cup liquid)

In all of these, reduce oil slightly to compensate for extra fat in sour cream.

Use the same amount of remaining ingredients in basic recipe unless otherwise noted. (Or skip the sour cream and use the normal amount of oil and water.)

 

Savory Herb Bread:

2 tbsp dried basil

3 tbsp chives

1/4 c Parmesan

 

Italian Herb Bread:

1 tbsp dried parsley

1 tbsp dried chives

1 tbsp dried Italian herb blend

2 tbsp dehydrated onion

2/3 c Parmesan

 

Alternate Italian Bread:

Increase yeast to 1 ¾ tsp

Use only 2 tbsp milk powder

Decrease salt to ½ tsp

Add 1 tsp garlic powder

Use 3 ½ level tbsp Italian spice blend

 

Christmas Fruit Bread:

Substitute brown sugar for white and add one extra tbsp

1 tbsp cinnamon

1/2 tsp vanilla

1/2 of a 225 gram container of dried mixed fruit

1/3 c raisins

Serve with vanilla buttercream icing

 

Cranberry Sour Cream Bread:

1/3 c cranberry sauce

1 heaping tbsp cinnamon

Increase white sugar to 3 tbsp total

1/3 cup dried craisins (Can wait for add ingredients beep)

Optional topping: Mix ¼ cup brown sugar, 1 tbsp margarine and 1tsp cinnamon into fine crumble.  Sprinkle on top of bread after mixing cycles are complete but before baking cycle starts.


Sour Cream Dill Bread:

Use ¾ cup sour cream and reduce water to make a total of 1 ¼ cup liquid

Reduce oil to 2 tbsp

3 heaping tbsp of dried dill

½ tsp garlic powder

extra pinch of salt

 

Roasted Red Pepper Bread:

½ cup sweet & hot pepper relish

½ cup sour cream

½ cup water

2 heaping tbsp roasted red peppers (PC brand in a jar)

Reduce oil by 1 tbsp

Increase yeast to 1 ½ tsp

1 tsp garlic powder

 

French Onion Bread:

3 tbsp dehydrated onion flakes

2 tbsp dehydrated chives

1 tsp garlic powder

(I also do this one without sour cream and use just the regular amount of water.)

 

Sun-dried Tomato Bread:

(I made this one without sour cream.)

½ c sun-dried tomatoes

Reduce oil to 1 tbsp

Increase yeast to 1 ½ tsp

1 tbsp oregano

2 tbsp freeze-dried chives

1 heaping tsp garlic powder

2 tbsp dehydrated onion

I have found that you can add 2 to 3 tbsp. of any herb blend and ½ tsp. of garlic powder to make flavoured breads. Roasted Garlic and Peppers is good. Garlic breaks down the yeast and makes the bread go coarse and flat. You can fix this by adding an additional ¼ tsp. of yeast on top of the herbs. The bread will rise nicely if you do this.

 

Cinnamon Raisin

Substitute brown sugar for white and add 1 to 2 tbsp extra

Add 2 tbsp cinnamon to the normal 3 cup white bread recipe and add ½ cup raisins at the beep (20 minutes into the cycle)

CINNAMON SUNRISE BREAD

1c water

2 ½ c white flour

1 tbsp dry milk powder

3 tbsp brown sugar

¾ tsp salt

2 tbsp oil

2 tsp cinnamon

1tsp yeast

Layer in order in bread maker and set on normal 2 lb/light crust cycle as above.

Add 1/3 c chopped pecans or raisins when prompted by “add ingredients” beep. (The machine beeps 20 minutes into the cycle and the Mix-in light is on.)
